A refreshing tropical cocktail featuring Park Distillery's 'Flora and Fauna' gin, blended with pineapple, passionfruit, lime juice, and topped with coconut pineapple sparkling water.
1: Make pineapple simple syrup: Add 3/4 cup water, 1/2 cup sugar, and 1-2 cups of chopped pineapple to a small to medium saucepan. Bring to a boil and stir to dissolve the sugar. Turn heat to low and let simmer for 20-30 minutes. Strain simple syrup to remove the pineapple pulp and then place in the fridge or freezer to cool.
2: Add gin, pineapple simple syrup, passionfruit pulp, lime juice, and egg white to a cocktail shaker. Dry shake (no ice) vigorously for 15-20 seconds.
3: Fill shaker 1/2 to 3/4 full with ice and shake vigorously again for 15 seconds.
4: Strain into a cocktail glass then top with coconut pineapple sparkling water.
5: Garnish with a pineapple slice, passionfruit, and lime slice and enjoy!
