Pickled Strawberry Pie Baked Brie

1: Add sliced strawberries, vinegar, sugar, salt, peppercorns, sage, and water to a container that can seal tightly.

2: Seal the container, shake well, and leave in the fridge overnight for 12-24 hours.

3: Once ready, drain the liquid and set aside for the Brie.

4: Preheat the oven to 350°F.

5: Place the Brie wheel in an oven-safe Brie baking dish.

6: Score the top of the Brie and top with pickled strawberries.

7: Roll out puff pastry to desired shape/size to fit over the Brie and strawberries.

8: Cut a small X in the middle of the Brie pie to let the steam escape and brush with an egg wash.

9: Bake at 400°F for 15 minutes or until the crust is flaky and browned.

10: Let cool for a few minutes and then serve with a chilled glass of rosé Pet Nat.
