Pecorino Crusted 4 Cheese Grilled Cheese

1: Butter the outsides of 2 slices of bread.

2: Spread a layer of softened cream cheese on the inside of each slice.

3: Add half the mozzarella, a layer of Pecorino slices, the grated Parmesan, followed by the rest of the mozzarella.

4: Press the two slices together and clean up any stray cheese by sticking it to the outside of the bread.

5: Heat a pan over medium heat. Melt butter, spread around the pan, and then add the sandwich.

6: Using a fine cheese grater (or zester), grate Pecorino on the outside of the bread to help form the crust.

7: Flip immediately and do the same on the other side.

8: Cover and let cook until golden and crispy and cheese is starting to melt (~5 minutes).

9: Cover again, turn heat to low-medium and leave for another 5-10 minutes (until the other side is golden and crispy and the cheese is perfectly melty).

10: Let cool for a minute or two and enjoy with a chilled glass of Pecorino!
